Simple brinjal fry /Kathirikaai varuval


Ingredients:

Brinjal / Kathirikaai - 4 nos
Red chili powder - 1 tbsp
Garam masala - 1/2  tbsp
Turmeric powder - 1/4 tbsp
Salt needed
Oil - 1 tbsp
Mustard seeds - 1/4 tspn
Channa & urad dhal - 1/2 tspn
Jeera - 1/4 tspn
Curry leaves - 1 strand

Recipe:

>Wash the brinjal well with water
>And cut vertically 
To the brinjal add all the spice powders and mix well 
Leave it for 10 minutes 
In a pan add oil and add the mustard seeds, jeera, channa dal, and urad dhal
When it turns golden color add the brinjal to it 
> Add the curry leaves
Allow it to cook for about 6 - 7 minutes in a low flame
Serve hot brinjal fry with sambar rice, curd rice, lemon rice, and rasam rice.
