Village style kara kolambu




Ingredients:

Gingelly oil : 5 tea spoon                                                
mustard seeds : Half tea spoon
Urid dal : Half tea spoon
Chana dal : Half tea spoon
Jeera: Quarter tea spoon
Fenugreek seeds : Quarter tea spoon
Curry leaves : Few
Garlic cloves : three
Dry chilli : 1
Fennel seeds : Half tea spoon for coconut paste
Brinjal : 7
Drumstick : 1
onion : 1
Tomato : 1
Coconut : 2 Pieces
Tamarind : 0.25g 


Method :

 












> In a pan add 5 tea spoons of oil and once oil heated add mustard.


>Once the mustard splutter add urid dal,chana dal,jeera,fenugreek.


> Add Dry chilli,Curry leaves,onion ,Garlic and salt.


> Then add tomatoes and turmeric powder.


> Add chilly powder and coriander powder.


> Mix it well and add little bit of water.cover and cook  for 5 or more min till the tomatoes gets mashy.


> Add Brinjal and Drumstick ,Mix it well and add little amount of water if required.cover and cook for 5 min till brinjal turns soft.


> Then add tamarind water and let it cook.


> Once the vegetables are cooked add coconut paste.




> For Coconut paste add quarter tea spoon of fennel seeds with coconut and grind it well.Let it boil for 2 min.


> This is the consistency and switch off the stove.Add coariender leaves.




Note : 

> This kind of brinjal is really nice for kolampu receips.
