Peerkangai poriyal / Ridge gourd stir fry /Beerakaya poriyal
Ingredients:
Ridge gourd / Beerakaya / peerkangai - 1 medium-sized
Onion - 1 big size
Tomato - 1 medium size
Homemade chili powder - 1 tbsp
Turmeric powder - 1/4 tbsp
Pepper powder - 1/4 tbsp
Curry leaves - 1 strand
Mustard seeds - 1/2 tbsp
Jeera - 1/4 tbsp
Channa dhal - 1/4 tbsp
Urad dhal - 1/4 tbsp
Oil - 1 tbsp
Salt - needed
Recipe:
* Peel the ridges from the gourd using a peeler and cut into cube sized
* Chop onion and tomato.
* Heat the pan and add oil once heated add the mustard seeds, jeera, channa dhal & urad dhal
* When it turns light golden color add the chopped onions
* when the onions turn translucent, tomatoes can b added along with curry leaves and diced ridge gourd.
* Give a stir and then add chili powder, turmeric powder, and salt.
* Mix it well and little water so that it gets cooked well. Cover it with a lid for 5 minutes.
* When the water is drained add little pepper powder and off the flame.
* Serve hot with sambar rice, curd rice
