Bitter gourd fry



Ingredients:

Bitter gourd - 3
Onion - 1 Big
Tomato - 1 Big
Oil - 2 Teaspoon
Mustard seeds - 1/4 teaspoon
Curry leaves - Handful
Chili powder - 1 Teaspoon
Coriander powder - 1 Teaspoon
Turmeric powder - 1/4 teaspoon
Salt - As required
Jaggery or sugar - 3 Teaspoon

Method:

> Wash and cut the vegetable into small cubes
> Prepare the vegetables before starting the process
> In a pan add oil, mustard, and curry leaves
> Once mustard splutters add onion
> Once onion turns brown add tomatoes and turmeric powder
> Once tomatoes turn mushy add chili powder and coriander powder
> Mix well and add bitter gourd
> Saute for 3 more minutes and add 150ml of water to boil
>Cover the pan by the lid and wait 10 min to cook. Wait till the water gets drained out
> Give a stir in regular interval
> Then add a piece of jaggery into it
> Give a stir
> Hot bitter gourd fry is ready to serve for lunch with rice and chapati
