Mutton Gravy in Kuchinigirls
Mutton - 3/4 kg
Ghee - 4 Teaspoon
Cinnamon - 2 medium
Cloves - 4
Cardamom - 4
Cumin seeds - 2 Teaspoon
Onion - 2 Big
Tomato - 2 Medium
Ginger garlic paste - 3 Teaspoon
Chili powder - 2 Teaspoon
Coriander powder - 2 Teaspoon
Turmeric powder - 1/2 Teaspoon
Garam masala - 1 Teaspoon
Curd - 4 Teaspoon
Salt - As required
Method:
> In a heavy-bottomed pan or cooker add ghee
> Once Ghee heated add cinnamon, cloves, and cardamon.Saute for a min> Then add cumin seeds and let it fry
> Now add chopped onions
> Give a stir
> Once onion became brown add Ginger garlic paste and give a stir for 1 min
> Now add turmeric powder and chili powder> Also add coriander powder and mix well.
> Now add chopped tomatoes and mix well
> I added crystal salt
> Once tomatoes turn mushy add washed mutton and mix well.
> Close the vessel by lid and keep it in medium flame
> Give a stir in regular interval
> Once it's boiled well add fresh curd and mix well without lumps
> Finally add garam masala
> This stage add a glass of water and let it boil
> Mutton is cooked well. Switch off the flame Recipe:

> Wash the mutton by water using turmeric and salt
> Preparation time of mutton is a minimum of 1 hour
> Take a Heavy bottomed Vessel. I chose the cooker
> I added 4 Teaspoons of Ghee. Instead of ghee, you can add oil also
> Once Ghee heated add cinnamon, cardamon, cloves, and cumin seeds
> Once its all fried add onion and once onion turn to brown add ginger garlic paste
> Saute well till the raw smells goes off
> Then add tomatoes, turmeric powder, and salt
> Once tomatoes turn mushy add chili powder, coriander powder.
> Add a little bit of water to make a paste consistency
> so far it takes 15 min for me
> Now add Mutton into it. and give a stir.
> Close the vessel by a lid and leave it for another 15 to 20 min
> Give a regular stir and add curd
> Once mutton boiled well add a spoon of garam masala.
> Let it boil well and switch off the flame.
> For this process it takes 1 hour.
