BRINJAL DRUMSTICK FRY



Ingredients : 

Brinjal - 7 
Drumstick - 1
Onion - 1 big
Tomato 1 big
Curry leaves - Handful
Ginger garlic paste - 2 Teaspoon
Turmeric powder - 1/4 teaspoon
Chili powder - 1 Teaspoon
Coriander powder - 1 Teaspoon
Oil - 5 teaspoon
Mustard - 1/4 teaspoon
Urid dal - 1/4 teaspoon
chana dal - 1/4 teaspoon
Salt - As required

Method:

> Cut the vegetables before starting the process
> Heat the pan with oil then add mustard.
> Once mustard spluttered add urad dal, chana dal
> Now add onion, curry leaves, salt. once onion turns brown add ginger garlic paste.
> Then add tomatoes and turmeric
> Wait till tomatoes turn mushy
> Now add chili powder and coriander powder
> Give a stir 
> Now add brinjal into it, cover the pan and let it cook for 2 or more min
> Then add drumstick and cover the pan by the lid and let it cook for another 7 or more min.
> Don't add water. In a regular interval open the lid and give a stir.
> Then add coriander and switch off the flame.
> Serve hot with rice for lunch.
