Mutton briyani
Ingredients:
To boil mutton :
Mutton - 1/2 kg
Red chilli powder - 1/2 tea spoon
Ginger garlic paste - 1 tea spoon
Turmeric powder - 1 tea spoon
Salt - 1 tea spoon
For briyani :
Seeragasamba rice - 1 cup
Onion - 2 big
Tomato - 2 medium size
Ginger garlic paste - 3 tea spoon
Green chilli - 3-4
Mint leaves - Handful
Chilly powder - 1 tea spoon
Coriander powder - 1 tea spoon
Garam masala - 1 tea spoon
Turmeric powder - 1/2 tea spoon
Curd - 2 tea spoons
Coconut milk - 1 cup thick milk
Oil - 3 tea spoons
Fennel seeds - 1 tea spoon
Cardamom - 3 nos
Patta - half inch
Lavanga - 4-5 nos
Star anise - 2 nos
Brinji leaf - 2-3 nos
Kalpasi - few (optional)
Salt - 1-2 tea spoon
Method:
* In a pressure cooker add mutton, ginger garlic paste,chilli powder, salt n water until the mutton is immersed.
* close the lid in pressurize it for 6-7 whistles to get the soft texture of mutton
* In a cooker add oil add al the spices given
* Add the chopped onions and let onions turn transparent
* Add the ginger garlic paste and keep on stirring so that it may not be burnt
* Add green chillies and tomatoes an let the tomatoes turn mushy
* Add the mint leaves
* Add all the masalas and little salt and mix the masala together
* Add the curd and leave the masala for 2 minutes in a low flame
* Once the masalas all cooked well add the mutton pieces alone and keep the mutton stock
* Let the masalas to bind well
* Add the coconut milk n mutton stock ,for 1 cup rice add 2 cups ( 1 cup coconut milk thick and 1 cup mutton stock/water)
* Let the water boil well once it starts to boil add the seeragasamba rice and give a stir and check for the salt
* Close the pressure cook with a plate and above that place a heavy bottomed vessel with water for dum process so tat the rice gets cooked well
* Put the flame in low and allow it to cook for 20 mins , after 20 mins switch off n allow it to rest for 10 mins
*Serve hot with onion,cucumber raita and Enjoy the day 😇.
Note : Adjust the spices and masalas level according to your taste buds.
